Beef & Broccoli Stir Fry
If there is one thing I know my kids will eat on any given night, it’s ground beef and broccoli. They love both of these ingredients and this simple one skillet dinner is no exception. My kids gobbled this meal up!

Beef & Broccoli Stir Fry
PREP TIME: 15 MINUTES COOK TIME: 25 MINUTES SERVES: 4
1 Tablespoon ghee or beef tallow
4 cups broccoli florets
1 small yellow onion, sliced
1 Tablespoon ghee or tallow
1 Pound Ground Beef
1 1/2 cups beef broth
1/4 cup coconut aminos
1/2 teaspoon unrefined salt
1 Tablespoon maple syrup
3 cloves garlic, minced,
2 teaspoons grated ginger
1 teaspoon red pepper flakes
2 Tablespoons arrowroot powder
2 Tablespoons cold water
handful of minced cilantro for serving
cooked white rice for serving
Preparation
Heat the ghee or tallow in a large skillet over medium high heat. Add the broccoli and onion and cook, stirring occasionally, until the onions are tender and the broccoli is bright green, about 8 minutes. Remove from the pan and set aside in a large bowl. Add the beef to the same skillet and use a wooden spoon to break up the meat a bit. Cook, stirring often until the beef is cooked through and no longer pink.
Stir all sauce ingredients together in a measuring cup (beef broth, coconut aminos, salt, maple syrup garlic, ginger, and red pepper flakes). Whisk until combined. Stir the arrowroot into the cold water to form a slurry and set aside.
Return the broccoli and onions to the skillet with the beef. Add the sauce ingredients and pour in the arrowroot slurry. Give everything a good stir. Bring to a simmer, reduce the heat to low and simmer until the sauce has thickened. About 5 minutes.
Serve over rice with minced cilantro
