Cheesecake Breakfast Bars

If the title of this post made you worry that I’m suggesting dessert for breakfast, don’t fret. These Breakfast Cheesecake Bars are packed with protein, fiber, and antioxidants, making them a wholesome, balanced way to start the day.

This high-protein breakfast bake was an instant hit in our house — and honestly, I’m not sure who was more excited about it, me or my kids! I’ve already made this recipe twice in a row because my husband and I polished off most of the first batch before the kids even had a chance. That’s how good these little cheesecake bars are.

One of my favorite things about this recipe is how simple and approachable it is. It comes together using pantry staples you likely already have on hand, yet the result feels special: a creamy, lightly sweet cheesecake-style breakfast that’s perfect for busy mornings, meal prep, or even a midday snack.

Breakfast Cheesecake Bars

Prep Time: 10 minutes    Cook Time: 30 minutes    Serves: 12 bars

  • 2 cups plain Greek yogurt

  • 4 large eggs

  • 1/4 cup maple syrup

  • 1/4 cup oat flour (you can easily make this at home blending oats in a blender)

  • 2 teaspoons vanilla extract

  • 1 teaspoons ground cinnamon

  • 1/4 crushed freeze dried strawberries or fresh berries


    Preparation

    1. Preheat the oven to 350F and line or lightly grease an 8X8 baking dish.

    2. Beat together the yogurt, eggs, and maple syrup. Add in the oat flour, vanilla and cinnamon.

    3. Pour the batter into the prepared pan. Top with the freeze dried berries.

    4. Bake for 35-45 minutes or until the edges are set and the center is just barely jiggly.

    5. Let the cheesecake cool to room temperature, then refrigerate for 2 hours before slicing. Or you can enjoy warm but the bars will be slightly harder to cut.
