Cottage Cheese Sweet Potato & Honey Beef Bowls

I hope I didn’t lose you with the title of this recipe, but hot damn! Hear me out! The combination of lightly spiced ground beef, roasted sweet potatoes and cottage cheese all drizzled with a touch of honey is a match made in heaven. The combination shouldn’t work, it sounds so weird, but it does, it really does! Trust me on this one. My kids gobbled this up. And bonus—this was on the table in 25 minutes flat! We added some sauerkraut and avocado for extra nutrients and everything tasted so good together. My husband and I were equally as happy to discover such a simple, whole family approved meal.

Cottage Cheese, Sweet Potato & Honey Beef Bowls

PREP TIME: 10 MINUTES    COOK TIME: 25 MINUTES    SERVES: 4

  • 1 large sweet potato, cut into small cubes

  • 3 teaspoons melted ghee

  • 1/2 teaspoon salt

  • 1/2 teaspoon garlic powder

  • freshly cracked black pepper

  • 1 pound ground beef

  • 2 tablespoons taco seasoning

  • fat pinch of salt

  • 1 cup whole milk cottage cheese

  • 1 avocado, chopped

  • 1 cup of sauerkraut, drained

  • 4 teaspoons runny honey

  • fine sea salt

Preparation

  1. Preheat the oven to 400F Toss the sweet potato cubes with the melted ghee and place on a baking sheet. Roast in the oven until lightly browned and fork tender. About 20 minutes. Tossing halfway.

  2. While the sweet potatoes are cooking prepare your beef. Heat a large cast iron pan over medium-high heat. Add the ground beef, taco seasoning and a fat pinch of salt. Cook, stirring to break up the meat, and cook until no longer pink. About 10 minutes.

  3. Once the sweet potatoes and beef are done cooking divide them between 4 plates or bowls and serve with cottage cheese, sauerkraut, avocado and drizzle with the honey.
