Cherry Almond Buckwheat Muffins
Our family has been enjoying cherry season! We live in a valley full of cherry orchards and even have a cherry tree in our yard. It’s one of the best times of the year for eating and these muffins were a fun way to celebrate our over abundance of cherries at our house!
These cherry almond buckwheat muffins are a nourishing snack that I feel happy about feeding my children. The combination of sweet cherries and almond extract is a match made in heaven.
These muffins are loaded with friendly fats, carbohydrates, vitamins, minerals and antioxidants from the cherries. They’re grain free (buckwheat isn’t a grain but in-fact a seed!) and perfect for anyone needing to avoid gluten or grains for any particular reason. As always, these muffins are refined sugar free and perfect for a busy morning when you just need something delicious to get your out the door.

Cherry Almond Buckwheat Muffins
PREP TIME: 15 MINUTES COOK TIME: 30 MINUTES SERVES: 12 large
1 cup blanched almond flour
1 cup buckwheat flour (sprouted if possible)
1/2 cup tapioca flour
1 teaspoon baking soda
1/2 teaspoon ground cinnamon
1/4 teaspoon unrefined salt
3 large eggs
1/4 cup pure maple syrup
1/4 cup date sugar (or maple or coconut sugar)
1/4 cup melted butter or ghee, cooled to almost room temperature
1 teaspoon vanilla extract
2 teaspoons almond extract
1 cup fresh cherries, chopped
Preparation
Preheat the oven to 350F and line a regular size muffin tin with liners.
In a medium size bowl, stir together the almond flour, buckwheat flour, tapioca, baking soda, cinnamon and salt.
In a large bowl, whisk together the eggs, maple syrup, date sugar, butter, vanilla and almond extract until smooth. Stir the dry mixture into the wet mixture until fully combined. Fold in the cherries.
Fill the prepared muffin cups just over three-quarters of the way full. Bake for 25-30 minutes or until a toothpick comes out clean when inserted into the center of a muffin.
