Healthy Chocolate Chip Chickpea Blondies

PREP TIME: 15 minutes    COOK TIME: 25 minutes    SERVES: 16 bars

  • 1 jar chickpeas (15 ounces) drained and rinsed

  • ½ cup unsweetened all natural peanut butter (we love East Wind peanut butter)

  • 1 egg

  • ¼ cup oat flour

  • 1/3 cup pure maple syrup

  • 2 teaspoons vanilla extract

  • ½ teaspoon salt

  • ½ teaspoon baking soda

  • 1/3 cup dark chocolate chips

Preparation

  1. Preheat the oven to 350F. Grease an 8X8 baking dish with a little ghee or oil.

  2. Add all the ingredients (minus the chocolate chips) to a blender or food processor. Blend until smooth. Fold in ½ of the chocolate chips to the batter and spoon the batter into the prepared baking dish. Sprinkle the top with the remaining chocolate chips.

  3. Bake in the oven for 20-25 minutes or until golden brown and cooked through.

    NOTES— These bars keep well in the fridge for up to 5 days. Pull them out and let them come to room temperature before enjoying or re-heat them in a 250 degree oven for 20 minutes.
