Simple Sausage & Mushroom Pasta

I don’t know why I’m so surprised that my kids like mushrooms but the fact is, they both really love them. Maybe I’m just surprised because I don’t think I liked them as a kid, but to be honest, I just don’t think we ever ate them in my household so there could have just been a lack of exposure going on there. Anyhow, my kids love mushrooms and that makes me really happy because I love them too! I have a fun snack I make a lot where I’ll just cook mushrooms in butter for a little while and then sprinkle salt and parmesan cheese and give it to the kids in bowls for snacking. They eat it like popcorn!

This meal is another great way to serve mushroom in a high protein, healthy and fast weeknight meal. This comes together in 20 minutes and is so tasty and full of ingredients I feel good about serving my growing babes. We used a chickpea pasta for added protein, local ground pork, local mushrooms, and some frozen green beans for a little extra veg! This is one of those easy meals that checks all the boxes for me when it comes to serving a balanced meal for my family. Plenty of fat, fiber and protein in one bowl. Yes please!

Sausage & Mushroom Pasta

PREP TIME: 10 minutes    COOK TIME: 20 minutes    SERVES: 6

  • 8 ounces pasta of choice

  • 1/2 pound green beans (fresh or frozen is fine)

  • 1 pound pork sausage

  • 1/4 cup finely chopped shallot or onion

  • 8 ounces mushrooms (any variety you like)

  • 1/2 cup freshly grated parmesan cheese

Preparation

  1. Prepare the pasta according to package directions. During the last 3 minutes of cooking add the green beans. Drain (reserving 1/2 cup of the cooking liquid).

  2. Heat a large cast iron skillet over medium high heat. Add the sausage and cook, breaking up the meat a bit, until cooked through. Remove with a slotted spoon to a plate and keep to the side. Add the shallot and mushrooms to the leftover drippings in the pan (if the pan is dry add a bit of ghee or butter) Cook until the veggies are tender, about 8 minutes. Add the sausage back to the pan along with the pasta and beans. Stir everything together adding a touch of leftover pasta water if needed. Add the parmesan cheese and stir together.

  3. Serve warm and enjoy!
